How the AGR oven works.
Heat-retaining oven with tuff stone deck
Solid cast walls made of refractory concrete chamotte mass and Weibern tuff stone as baking surface. The tuff stone absorbs the moisture from the dough and releases it during baking.
Automatic pellet firing
The baking chamber is directly fired with pure wood pellets, automatically dosed and low-smoke. The burners clean themselves, control is via touch display with individual baking programs.
Optional steam injection
The ovens can be equipped with steam injection on request. The insulated storage door can be opened over the entire baking surface width.
Automation
The Clean-Loader.
The Clean-Loader was specially developed by AGR Biotec for wood-fired ovens. In the first step, the baking surface is completely cleaned; in the second step, the dough pieces are brought into the clean oven and placed on the tuff stone.
From three baking decks onwards, a loader should always be planned, as well as automatic pellet filling.
