Construction

A 4-wall heat-retaining oven with heat storage door.

The insulated storage door is an innovation by AGR Biotec and keeps heat loss low. The baking result remains uniform; repositioning the loaves is not necessary.

  • 1 to 3 decks on top of each other are possible.
  • The entire baking surface width can be opened – working with a peel is easily possible.
  • The peel edge protects the tuff stone deck.
  • The loading height is adjusted to customer requirements.
  • The baking surface is level and suitable for automatic loaders.
  • State-of-the-art touch control with individual baking programs, diagrams and evaluation of heating and baking times. The control is also possible via app.

Between baking cycles, reheating is only necessary for about 30 minutes. The more often you bake in succession, the more efficient the baking becomes, as the oven retains the heat.

Firing

Self-cleaning pellet burners.

The pellet burners are specially produced for industrial use, are built directly into the baking chamber and are automatically cleaned. The ovens are fed via suction filling systems with level sensors or with bagged goods – remote monitoring and operation are possible via app.

Optional equipment

Less technology than you expect – more if you want it.

The efficient, automatically controlled combustion of the wood pellets ensures very good exhaust gas values. An electrostatic precipitator is therefore not required – but it is available for your bakery, just like the steam injection unit, which is implemented per baking deck.

Electrostatic precipitator – not necessary, optionally available

Clean, uniform combustion and low fine dust levels: Our pellet wood-fired ovens manage without an additional separation system. Where an electrostatic precipitator is desired or specified, we supply and integrate it as an option on request.

Steam injection unit – per baking deck

For crust, cut and aroma, each baking deck can be individually equipped with a steam injection unit. This allows you to use steam exactly where your product range needs it – from one deck to the full oven width.

Construction materials

Natural materials without chemical additives.

Chamotte stones

Refractory concrete chamotte mass

The oven walls are solidly cast and withstand temperatures up to 1200 °C. The massive construction holds the deep heat longer, so even 2 kg loaves are no problem.

Weibern tuff stone

Weibern tuff stone

The tuff stone is quarried in the Vulkaneifel in Weibern. It stores moisture and heat and releases both during baking – this creates the typical crust.
